Amaranthus viridis is a cosmopolitan species in the botanical family Amaranthaceae and is commonly known as Slender Amaranth or Green Amaranth.

It is eaten as a vegetable in parts of Africa.[1]

A traditional food plant in Africa, this little-known vegetable has potential to improve nutrition, boost food security, foster rural development and support sustainable landcare.[2]
